  9. 1 tsp ☆Chicken soup stock granules
  10. 1 tbsp ☆Tianmianjiang
  11. 1 tbsp ☆Sugar
  12. 3 tbsp ☆Soy sauce
  13. For the katakuriko slurry:
  14. 1 tbsp ★Katakuriko
  15. 1 1/2 tbsp ★Water
  16. 1 Sansho pepper
  17. 1 Oil

  1. Cut tofu into cubes (1.5 - 2 cm) and submerge in boiling water for about 1 minute. Drain on a sieve lined with paper towels. ※This will drain the excess water from the tofu and prevent crumbling.
  2. Chop the leek, ginger, and garlic finely.
  3. Mix the ☆ ingredients well.
  4. Heat oil in a wok, and stir fry the leek, ginger and garlic until aromatic.
  5. When the pan is aromatic, turn up the heat, put in the dobanjiang, and stir-fry.
  6. When everything is well cooked, add the combined ☆ ingredients and bring to a boil. Add the tofu.
  7. When it comes to a boil again, add the katakuriko slurry and stir to thicken the sauce to finish. For adults, sprinkle sansho pepper before eating.
