  1. 2 portions Chinese noodles (thick noodles)
  2. 100 grams Ground pork
  3. 20 cm Green onion (finely chopped)
  4. 1 tsp Ginger (finely chopped)
  5. 1 tbsp Doubanjiang
  6. 2 tbsp ◎Weipa
  7. 2 tsp ◎Soy sauce
  8. 1 1/2 tbsp ◎Vinegar
  9. 1/2 tsp ◎Sugar
  10. 4 tbsp Sesame paste
  11. 1 tbsp Vegetable oil + sesame oil
  12. 1 as much (to taste) Ra-yu
  13. 1 Salt (for adjusting the flavour)
  14. 900 ml Water

Instructions to make Rich, Yummy, and Spicy Dan Dan Noodles

  1. Heat the oil in a wok, and fry the ground pork well until fragrant.
  2. Add the ginger, 2/3 of the minced green onion, and doubanjiang, then stir-fry over medium-low heat until fragrant.
  3. Set aside 2 tablespoons of the stir-fried ground pork for the toppings.
  4. Add the water, bring to a boil, and skim off the scum. Add the ◎ ingredients, and simmer for 2-3 minutes over medium-low heat.
  5. In the mean time, add the sesame paste to a bowl, and dilute with Step 4 soup. Mix in the remaining green onions, and set aside.
  6. Start cooking the noodles.
  7. Taste the soup, and if it's too thin, adjust the taste with salt, then turn off the heat.
  8. Mix in the sesame paste mixture .
  9. When the noodles are cooked, drain the water, transfer into a serving bowl, and pour in the soup.
  10. Top with the ground pork as a topping, drizzle with ra-yu chili sesame oil if you like, and done.
